Chef Debra Erickson is the founder of The Blind Kitchen and an instructor at the Oregon Commission for the Blind. The Blind Kitchen offers adaptive tools, helpful strategies, and specialized knowledge to people who are blind or vision impaired and want to cook safely, confidently, and independently. Chef Debra loves to find teas that have unique her Chef Debra loves to find teas that have unique herbs or spices that will help infuse flavor when boiling, simmering or poaching. When a tea can't be found, we offer an easy solution: our Herb Bags! The herb bag allows the cook to place herbs and spices such as bay leaves, whole cloves, and thyme sprigs into the cooking pot, allowing their flavors to infuse the food, and making it easy to retrieve from the liquid when finished.

The Audio Description Project (ADP), an initiative of The American Council of the Blind (ACB) recognizes achievement by individuals and/or organizations for outstanding contributions to audio descriptions. The Blind Kitchen, founded by executive chef Debra Erickson just last year, is nominated in the media/individual category.
The award will be announce on July 5th during the General Session of the ACB Conference and Convention.

Sometimes it's best to keep it simple. One of our Sometimes it's best to keep it simple. One of our most simple and most useful tools is a work tray. Work trays are a must in any visually impaired cook’s kitchen. Chef Debra slices food right on the plastic tray, and the raised edges keep the cut food on the tray instead of skittering onto your counter or floor. Work trays also contain spills and make clean-up easy and fast.

The corn silk brush is something you don't know you need until you have it. Getting all of the silky hard-to-feel corn silk strands completely off the cob can be difficult because they offer neither visual nor much tactile information. The varied-length stiff brush is very effective in removing even the tiniest of silk strands from the corn.

We love cooking with a nice wooden spoon and we lo We love cooking with a nice wooden spoon and we love and extra long handled one that is available at our store. Its additional length allows the vision-impaired cook to stir the food in a hot pan without fear of dropping the spoon into the bottom of the pan, safely locate where the pot is on a hot stovetop, and avoid messes. 🥄

Since wood does not conduct heat, the cook will never burn their hands by touching the wood handle, and it can stay in the pot while food is cooking, eliminating the need to transfer the food-covered spoon to a spoon rest.

The TBK Double Skewers allow similar-sized pieces of food to be cooked and turned at the same time, usually on a grill, or under a broiler. Convenient and easy to use, they are already one of our more popular new items from our store.

The Thermometer Clip allows the blind cook to attach a thermometer to the rim of a pan to be able to safely assess and monitor the temperature of the hot liquid in the pan. Why Blind-Friendly? It is important to be able to safely assess and monitor hot liquids in a pan when a desired temperature needs to be maintained, such as when deep frying or candy making. This can be a challenge for cooks with vision loss to keep their fingers safely away from the hot liquid while assuring that the tip of the thermometer probe is in contact with the liquid. The Palm Peeler removes the thin outer skin from vegetables such as carrots, potatoes, and parsnips. It is a sturdy plastic square that measures two and a half inches by two and a half inches with two open plastic rings attached to the upper back of the tool. On the opposite side of the plastic square is a stainless steel blade that is exactly like a stick peeler; it runs vertically down the center front of the square. Colors vary. Why Blind-Friendly? The Palm Peeler makes peeling vegetables safer for the cook with vision loss. It is also a more accurate tool for peeling vegetables than the traditional peeler with a handle.
